History of the cooperative cellar, formerly the convent of the Dominicans:
Founded in 1290, the Dominican Convent has radiated for five centuries on the life of the city. In 1926, it was bought by the winegrowers of Collioure who transformed it into a cooperative winery.
The tour allows you to discover a terroir, landscapes and know-how implemented for the elaboration of AOP Collioure Banyuls wines.
The cooperative cellar today:
The Dominican cellar is a small wine cooperative with human size.
One hundred and fifty cooperative winegrowers are manually managing small plots planted on hillsides.
Shale stone terraces make mechanization impossible. The work is hard and yields are low.
The production is divided between the appellation Banyuls (Natural sweet wine) and the appellation Collioure (Red Rosé and White).
Our cellar is located in the Port D'Avall, in the old church of the Dominicans dating from the thirteenth century. The church is a single-nave, southern Gothic style and classified as a historic monument. Our great wines age under these centuries-old vaults.
